Chow Fun(Instant Spice Mix Version)

Chow Fun is a classic Cantonese dish. Chow means stir-fry and fun means flat starchy noodle. It is originally made with soy sauce and beef. Then I found the Filipino instant spice mix for rice noodle which tastes quite like the chow fun spices. So I made up this easy version of Chow Fun recipe.


Ingredients
  • 8 oz Cut Chinese Celery Stems
  • 1/2 piece Chicken Breast
  • 2 cloves Peeled Garlic Chopped
  • 2lbs. Fresh Chow Fun(Starchy Noodle)
  • 1/2 cup Oil
  • 1 tbsp Cooking Wine
  • 1 bag Mama Sita’s Bihon(Rice Noodle) Spice Mix
Serving: 3 People

Instructions:
Step 1

Cut off the leaves on the celery and cut the stems to short pieces. Mince the garlic and cut the chicken breast to skinny strips.

Step 2

Leave the chow fun in a microwavable container and microwave for 2 minutes. This step can soften the noodles, so they don’t break to crumbles during stir-fry.

Step 3

After 2 minutes microwaving, separate the noodles to big chunks. Then microwave for another 2 minutes. Separate the noodles to strips.

Step 4

Heat the oil and garlic in a wok or pan with med-high heat till the garlic bubbles. Then add the chicken. Keep stirring till the chicken turn white.

Step 5

Add the cooking wine and keep stirring for another minute. Add Chinese celery and keep stirring.

Step 6

After celery gets soft(this takes a while), turn to low heat. Add the noodles. Stir and flip quickly and evenly. Then add the spice mix.

Step 7

Keep stirring, so the spice gets on the noodles evenly. If the noodles absorb oil and the dish seems too dry, add 1/2 cup of water while stirring. The noodles are already cooked and no need to stir them too long, besides, they are quite fragile. Once the spice mix is evenly mixed with other ingredients, it’s ready to serve!
